Blueberry Spinach Salad

This Blueberry Spinach Salad made with Fresh Attitude Baby Spinach and tossed in a simple lemony vinaigrette is light and so refreshing.

For the Dressing

  • 3 tablespoons olive oil (extra virgin)
  • 1 1/2 tablespoons lemon juice (freshly squeezed)
  • 1 1/2 teaspoons lemon zest (freshly grated)
  • 1 teaspoon sugar or honey
  • 1/2 teaspoon dijon mustard
  • salt and pepper to taste

For the Salad

  • 5 ounces Fresh Attitude Baby Spinach (1 small container or 8 cups)
  • 1 cup fresh blueberries
  • 1/2 cup sliced almonds
  • 1/3 cup feta cheese*
  • 1/4 cup red onion (thinly sliced)


  1. In a small bowl, whisk together all dressing ingredients until well combined. Refrigerate until ready to serve. 

  2. Place all of the salad ingredients in a large serving bowl. Refrigerate until ready to serve. 

  3. Once ready to serve, toss the salad dressing (you may not need all of the dressing) with all salad ingredients until coated.  

  4. Serve immediately!
