Healthyish Chocolate Waffles (Vegan)

These vegan chocolate waffles are so delicious!

Ingredients

  • 2 cups whole wheat flour
  • 1 tablespoon corn starch
  • 3/4 cup cocoa
  • 1/2 cup sugar or coconut sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • pinch salt
  • 2 1/4 cup unsweetened chocolate almond milk (or other plant milk)
  • 2 teaspoons white vinegar
  • 2 teaspoons vanilla
  • 1/4 cup melted coconut oil
  • coconut whip (for serving, optional)
  • maple syrup (for serving, optional)
  • fresh berries (for serving, optional)

Instructions

  1. Heat your waffle iron according to the manufacturer’s directions.
  2. Mix together the flour, corn starch, cocoa, sugar, baking powder, baking soda and salt with a whisk in a medium bowl.
  3. In a separate bowl, combine the hazelnut or almond milk and vinegar and let it sit for 3-5 minutes. Stir in the vanilla and melted coconut oil and immediately whisk into the dry ingredients until just incorporated (the batter may be a bit lumpy still - do not overmix it).

  4. Spray the waffle iron with oil and cook the waffles according to your waffle iron directions.
  5. Serve with coconut whip, maple syrup and fresh berries if desired.

Recipe Notes

*to add protein powder to these waffles, use 2 scoops of chocolate protein powder, reduce the flour to 1 1/2 cups, and reduce the cocoa powder to 1/2 cup.
