Ingredients

Apple Crisp

  • 5 cups 1/2" diced peeled apples* about 4-6 apples
  • 1 cup old fashioned rolled oats gluten free
  • 1/2 cup flour gluten free
  • 1/2 cup lightly packed brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup melted butter divided

Beth’s Bourbon Sauce

  • 1/4 cup butter
  • 1 tablespoon flour
  • 1/2 cup lightly packed brown sugar
  • 1/4 cup bourbon
  • 1/2 cup cream or coconut cream
  • pinch salt
  • 1 teaspoon vanilla

Instructions

  1. Preheat the oven to 350 F and lightly grease 6 oven proof ramekins or a 8x8” pan. Place the diced apples in a medium bowl and stir in 1 tablespoon of melted butter.

  2. In a large bowl, combine the oats, flour, brown sugar, cinnamon and salt.  Mix to combine.  Stir in the remaining melted butter to combine.
  3. Stir 1/4 cup of the oat mixture into the apples and stir to combine.  Transfer the apples to the baking dish(es) and sprinkle the oat mixture evenly over the apples.
  4. Bake until the top is golden brown, around 1 hour.
  5. While the crisp is baking make the Bourbon Sauce.  In a small saucepan over low heat combine the butter and flour and whisk together; cook for 1 minute. Add the brown sugar, bourbon, cream and salt; simmer and whisk until the sugar is dissolved and the sauce has slightly thickened, 2-3 minutes.  Remove from the heat and whisk in the vanilla.

  6. Serve slightly warm with a scoop of vanilla 'nice cream' or ice cream and a drizzle of Beth’s Bourbon Sauce.
