Salmon Superfood Salad

A salad FULL of my top recommendations for foods that help give you healthy happy hair! Enjoy salmon, avocado, walnuts, berries, eggs on a bed of vibrant spinach.

Ingredients

For the Salad

  • 8 cups spinach
  • 2 hardboiled eggs sliced
  • 1 avocado sliced
  • 1 cup sliced strawberries
  • 1 cup blueberries
  • 1/2 cup walnuts
  • 2 cooked salmon filets

Classic Vinaigrette

  • 2 garlic cloves minced
  • Juice of 1 lemon
  • 2 teaspoons Dijon mustard
  • 1 tablespoon sugar or honey
  • 1 tablespoon red wine vinegar
  • 2/3 cup olive oil
  • salt & pepper to taste
  • 1 tablespoon fresh dill (optional)

Instructions

  1. Layer the salad ingredients together in a platter.

  2. Combine the vinaigrette ingredients and whisk together. Drizzle on the salad and toss together before serving.
