Apple Crisp Granola

This fall-inspired Apple Crisp Granola is the most comforting thing to eat! Make a yogurt parfait by layering it with homemade apple sauce and yogurt.

Ingredients

  • 5 cups old fashioned oats
  • 3 cups diced dried apple slices the soft kind
  • 3 cups chopped pecans
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • 1/8 teaspoon cloves
  • ¼ teaspoon salt
  • ¾ cup oil avocado or canola oil work well
  • 2/3 cup maple syrup
  • 1 teaspoon vanilla
  • 1 cup hemp hearts

Instructions

  1. Preheat the oven to 300F and line 2 large baking sheets with parchment paper.
  2. In a large bowl combine the oats, apples, pecans, cinnamon, nutmeg, cloves and salt. Toss together to combine.

  3. In a medium bowl combine the oil, maple syrup and vanilla. Stir to combine and slowly pour it over the oat mixture, tossing to combine as you pour. Stir until well combined.
  4. Divide the granola evenly between the two prepared pans and bake until just light golden brown for around 30 minutes, tossing half-way through. Stir in the hemp hearts and cool completely before enjoying and store in a sealed container at room temperature for up to 2 months.
