Buttermilk Waffles

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla
  • 2 eggs separated
  • 1 1/4 cup buttermilk
  • 3 tablespoons melted butter

Instructions

  1. Whisk together both flours, baking powder, baking soda, sugar and salt in a medium bowl.
  2. In a medium bowl, beat the egg whites with an electric mixer on high until stiff.
  3. In a separate small bowl, whisk together the vanilla, egg yolks, buttermilk and melted butter until combined. Stir the wet ingredients into the dry and mix until just combined: fold in the egg whites.

  4. Cook the waffles in a preheated waffle iron according to the manufacturers directions until golden brown and enjoy!
