Prep Time 10 minutes
Chill Time 5 hours
Servings 18 bars

Ingredients

  • 1 1/2 cups large flake oats
  • 1/2 cup oat flour
  • 1 cup shredded coconut
  • 1 cup dried pineapple roughly chopped
  • ½ cup hemp hearts
  • 1/2 cup ground flax seed
  • 1/2 cup pumpkin seeds
  • 1/3 cup coconut oil melted
  • 1/2 cup brown rice syrup or honey
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt

Instructions

  1. Line a 9×9” baking pan with parchment paper, leaving some paper hanging off the sides so that you can easily remove the bars from the pan.
  2. In a food processor, add all of the ingredients and pulse until combined: the mixture will stick together when pressed between your fingers.
  3. Firmly press the mixture into the prepared pan with your hands: you want to make sure that it is firmly pressed to ensure that the bars will stick together.
  4. Refrigerate for a few hours or overnight before removing from the pan and cutting into bars. Store in an airtight container in the fridge for up to 2 weeks.
