Send your tastebuds to the spa with this light and flavourful Minted Honey Apricot Couscous Salad. You can add a filet of broiled wild salmon or some cooked free-range chicken breast if you wish to add more protein.
In a medium saucepan combine 2 cups of water along with the olive oil and salt and bring it to a boil.
Stir in the couscous, remove from the heat, cover and let stand for 5 minutes. Fluff with a fork and place in a large bowl to cool until it reaches room temperature.
Once the couscous has cooled, add the apricots, red onion, mint and almonds. Toss to combine.
In a small bowl, whisk together the olive oil, white wine vinegar and melted honey. Drizzle the dressing on top of the salad, toss together and serve.
