Parmesan Lemon Roasted Brussels Sprouts

Ingredients

  • 1 1/2 lb. Brussels sprouts
  • 3-4 tablespoons olive oil
  • 1/2 teaspoon sea salt
  • 3 tablespoon freshly grated parmesan cheese (or sub vegan parm)
  • juice of 1/2 lemon
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 400F.
  2. Prepare Brussels sprouts by trimming the end and removing any damaged leaves: wash thoroughly.

  3. Cut the Brussels sprouts in half length ways through the stem, and drizzle with the olive oil: toss them to coat and sprinkle with the sea salt.  Place on a baking sheet.

  4. Bake for approximately 30 minutes, until golden brown and cooked throughout, tossing half way through.

  5. Remove from oven and immediately toss with the parmesan cheese and lemon juice.  Season with salt and pepper to taste.
