Vegan Irish Soda Bread

  • 2 cups unsweetened almond milk (or other plant based milk)
  • 2 tablespoons white vinegar
  • 3 1/2 cups flour
  • 1/2 cup wheat germ
  • 2 tablespoons sugar
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2/3 cup cold vegan butter, cut into 1/2" chunks
  • 1/3 cup finely chopped fresh chives


  1. Preheat the oven to 375F and line a large baking sheet with parchment paper.

  2. In a medium bowl, combine the almond milk and vinegar together and let sit for 10 minutes.

  3. Meanwhile, in a large bowl combine the flour, wheat germ, sugar, baking powder, baking soda and salt.  Add the vegan butter and, using your fingers, break it into pea-sized pieces. Add the chives and stir to combine.

  4. Add the almond milk to the flour mixture and toss with a fork to combine: the dough should be combined but still rough in texture.

  5. Empty the dough onto a floured surface, divide into 2 balls, and smooth each piece of dough into a round ball using your hands.  Place on the baking sheet, well spaced apart, and bake until golden brown and the bottom sounds hollow when tapped, about 40 minutes.  Serve warm.
