Fish Tacos with Apple Cilantro Slaw

Tacos. Are they not the perfect food? These Fish Tacos with Apple Cilantro Slaw are full of such great flavour, crunchy veggies, and a smoky chipotle creme fraiche. The perfect recipe to throw into the mix!

Ingredients

Coleslaw Ingredients:

  • 2 cups finely shredded red cabbage
  • 1 cup grated apples skin on (Ambrosia preferred)
  • 1/3 cup orange juice
  • 1/2 cup shredded carrot
  • 1 tablespoon diced jalapeño (optional)
  • 1/2 teaspoon salt
  • 1/4 cup chopped cilantro

Fish Ingredients:

  • 1 pound white fish i.e.: cod, sole or halibut
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon cumin

Chipotle Crème Fraîche:

  • 3/4 cup full-fat Greek yogurt or sour cream
  • 2 teaspoons chipotle hot sauce
  • 1 tablespoon lime juice

Taco Fixings:

  • small flour tortillas
  • jalapeño thinly sliced (optional)
  • wedges of lime
  • pickled red onions (optional garnish)
  • sliced avocado
  • chopped cilantro

Instructions

  1. Combine all of the coleslaw ingredients together in a large bowl, toss together, and set aside.
  2. In a separate large bowl, season the fish with the salt, garlic powder, paprika, chili powder, cumin and set aside.

  3. Make the Chipotle Crème Fraîche by mixing all ingredients in a bowl and set aside. Prepare all of your toppings so that they are ready once the fish has cooked.

  4. Heat a large frying pan on medium heat and cook the fish on each side until the fish is cooked through (be gentle when flipping).  Make sure that the pan isn't crowded; you may need to do this in two batches depending on the size of your pan. Place the cooked fish on a serving dish covered with foil to keep it warm.

  5. While the fish cooks, heat a separate medium frying pan over medium heat to warm up your tortillas (you can do this in the oven with a damp clean dish towel too by wrapping the toritllas and baking).  Run each tortilla under water (I use our tap) and place on the pan for about 30 seconds a side until the tortilla is warm. This will give you a fresh chewy flour tortilla!

  6. Using a fork, flake the fish gently. Serve the tacos family style with the fish, coleslaw, Chipotle Crème Fraîche and all the fixings.
