Homemade Tzatziki

  • 1 cup grated long English cucumber (skin on, about ½ a cucumber)
  • 1 teaspoon sea salt
  • 1 cup 2% plain Greek Yogurt
  • 2 tablespoons fresh lemon juice (from 1 lemon)
  • 1 tablespoon fresh chopped dill (plus extra for garnish)
  • 1 tablespoon extra virgin olive oil
  • 2 clove garlic, crushed


  1. Place the grated cucumber in a fine sieve, mix in the salt, and let sit for approximately 30 minutes, pressing down on the cucumber and turning it over periodically to remove as much moisture as possible.

  2. Combine all of the ingredients, including the drained cucumber, in a small bowl and set aside. Refrigerate for up 3 days.
