Sneaky Mommy Meatballs

These Sneaky Mommy Meatballs are mother tested and kid approved! They're full of flavour, hidden healthy veggies, and is a great weeknight family dinner. Serves 4-6 people, depending on your appetities.

Ingredients

  • 1 pound ground chicken* (or other ground of choice)
  • 1/2 cup shredded yellow onion
  • 1/2 cup shredded peeled carrots
  • 1/2 cup shredded zucchini (leave skin on)
  • 1 egg
  • 1/2 cup panko bread crumbs**
  • 1 clove garlic, minced
  • 1/4 cup grated parmesan cheese (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon oil

Instructions

  1. Combine all ingredients together (except the oil) in a large bowl and mix well (use your hands if needed)

  2. Form 1 inch balls with mixture, using your hands.

  3. Heat a large frying pan over medium high heat with oil. Pan fry in the skillet 6-8 minutes or until browned and cooked through. Serve with pasta if desired and a sprinkle of parm!
