Almond Joy Energy Balls

These no-bake Almond Joy Energy Balls pack all the same flavour of it’s namesake candy bar, take minutes to throw together, are loaded with good-for-you ingredients, and make for an easy and healthy breakfast or snack.

Ingredients

For the Balls

  • 1 cup large flake oats
  • 1 cup toasted raw almonds
  • 1/3 cup cocoa or cacao powder
  • 1 cup shredded coconut
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla
  • 1 cup pitted dates (I used Medjool)
  • 1 tablespoon maple syrup
  • 1/4 cup coconut milk ( I used canned)

For the Coating (optional)

  • 1/4 cup coconut milk
  • 1/2 cup shredded coconut

Instructions

For the energy balls

  1. Place all other ingredients except the coconut milk in a food processor and process until it is smooth and starts to stick together, about 2 minutes.  Slowly add the remaining (1/3 c.) coconut milk in a stream until it the mixture holds nicely together when pressed with your fingers.  You may not need all of the coconut milk. 

For the coating

  1. Put ½ cup of the shredded coconut and 1/4 cup of coconut milk in separate shallow bowls and set aside.

  2. Roll a tablespoon of the mixture in your hands to make a ball, immerse each ball in coconut milk (so that the coconut sticks), and roll in the shredded coconut to coat.  Repeat with the remaining mixture.
