Iced Brown Sugar Oat Milk Shaken Espresso

This Iced Brown Sugar Oat Milk Shaken Espresso, is sure to be your new favourite summer drink (it's definitely ours!). I should mention it's plant-based and tastes like a cinnamon bun, earning it tens across the board! Note that you won't be using all of the syrup in your single serving.

Ingredients

Brown Sugar Syrup*

  • 1/4 cup brown sugar
  • 1/4 cup water
  • pinch cinnamon
  • 1/2 teaspoon vanilla (optional)

For the Coffee

  • 2 ounces espresso (or 1/2 cup strong brewed coffee)
  • oat milk for topping**
  • ice
  • mason jar with lid

Instructions

  1. Heat a small saucepan on medium heat. Add the brown sugar, water and cinnamon and stir to combine. Once combined, bring to a simmer and leave on low for 3-5 minutes, stirring frequently, until sugar has completely dissolved and syrup has slightly thickened (it will remain quite runny!) Remove from the heat, stir in the vanilla, and set aside.

  2. Prepare 2 ounces of espresso, or 1/2 cup strong coffee. Fill a mason jar halfway with ice cubes, then add 1 tablespoon of syrup (or more to taste!), and add the coffee. Cover the jar with the led, and shake for 30 seconds or longer!

  3. Enjoy in the mason jar or pour into a new glass and top with oat milk and more ice if desired. Add a dollop of whipped cream or coconut whip and a sprinkle of cinnamon if desired before serving.
