Ingredients

  • 398 ml can black beans rinsed & drained
  • 1/2 cup canned or frozen corn
  • 1/2 cup diced red pepper
  • 1/2 cup diced orange pepper
  • 1/4 cup finely diced red onion
  • 1 diced avocado
  • 1/4 cup chopped cilantro
  • 3 tablespoons olive oil
  • 1 garlic clove minced
  • 2 tablespoons fresh lime juice
  • 2 teaspoons cumin
  • pinch of sugar
  • salt & pepper to taste

Instructions

  1. Combine all of the ingredients in a medium bowl and mix. Serve cold as a salad or with tortilla chips as a salsa!
