Prosciutto Melon Salad

This compltely refreshing salad is like a work of art and is fabulous for entertaining! Add spiced pecans for some extra crunch (the ones in our cookbook Fraich Food Full Hearts are epic if you have the book!).

For the Salad

  • 4 cups baby arugula
  • 1/2 small cantaloupe, in small balls (use melon baller)
  • 1/2 small honeydew melon, in small balls (use melon baller)
  • 1/2 small watermelon, in small balls (use melon baller)
  • 8 slices prosciutto
  • 200 grams small bocconcini

For the Vinaigrette

  • 1/4 cup olive oil
  • 2 teaspoons apple cider vinegar
  • 1 tablespoon honey
  • pinch of salt and pepper


  1. Whisk all of the vinaigrette ingredients in a small bowl and set aside.

  2. Combine all of the salad ingredients. Layer in the arugula, cantaloupe, honeydew, watermelon, prosciutto pieces and bocconcini. Pour the vinaigrette over salad, toss and enjoy!
