For the Dressing
1/2cupcanned coconut milk
2tablespoonsfresh lemon juice
1/4cupGreek yogurt (plain or vanilla)
1tablespoonmaple syrup(or taste)
1/2teaspoonlemon zest
1/2teaspoonpoppy seeds
For the Salad*
2cupswatermelon, cubed or balled
2cupshoneydew, cubed or balled
2cupscantaloupe, cubed or balled
2cupsstrawberries, sliced
1cupblackberries, whole
1cupbanana slices
Instructions
Prepare all fruit and combine in a large bowl. Whisk together all dressing ingredients and drizzle on top of salad when ready to serve. Best enjoyed cold!
