Chopped Salad with Sesame Peanut Dressing

This Chopped Salad with Sesame Peanut Dressing is vibrant, crunchy and bursting with flavour. It is great meal prepped ahead (not tossed in dressing) with a big batch of the Sesame Peanut Dressing stored in the fridge.

Ingredients

  • 1 head Romaine, finely chopped
  • 1 cup diced yellow pepper
  • 1 cup diced red pepper
  • 1 cup thinly sliced purple cabbage
  • 1 cup julienned carrots
  • 1/4 cup sliced green onion white and light green parts only
  • 1 cup diced cucumber
  • 1/4 cup crushed peanuts
  • 1 avocado, sliced to garnish

Peanut Sesame Dressing

  • 1 teaspoon grated ginger peeled
  • 1 tablespoon sesame oil
  • 1/4 cup smooth natural peanut butter
  • 1/4 cup low sodium soy sauce
  • 3 garlic cloves, minced
  • 2 tablespoons maple syrup
  • 1 lime, juiced
  • 1 tablespoon rice vinegar

Instructions

For the Salad

  1. Combine all of the salad ingredients (except the avocado) in a large shallow bowl (section the ingredients for pretty presentation). Store in the fridge, covered, until ready to serve. When ready to serve, toss to combine with the Sesame Peanut Dressing.

For the Dressing

  1. Whisk together all ingredients in a small bowl or in a mason jar and refrigerate until ready to use.
