Mexican Kale Salad

Ingredients

Salad Ingredients:

  • 3 cups chopped kale (loosely packed)
  • 1 bunch chopped cilantro
  • 1 cup chopped orange or red pepper (seeded)
  • 1 avocado (diced)
  • 1/2 jalapeño pepper (seeded and finely chopped)
  • 1 cup cooked corn
  • 1 can drained and rinsed black beans
  • 1/2 cup feta cheese (crumbled)
  • 1 cup chopped tomato (about 4 tomatoes)
  • 1/4 cup finely chopped red onion

Dressing Ingredients:

  • 1 tablespoon honey
  • 2 tablespoon lime juice
  • 1/2 teaspoon salt
  • 2 tablespoon rice wine vinegar
  • 1 crushed garlic clove
  • 1/3 cup canola or olive oil

Instructions

  1. In a large bowl, combine all of the salad ingredients together.
  2. In a separate small bowl, combine all of the dressing ingredients together with a whisk.
  3. Toss the salad in the dressing and serve!
