Preheat oven to 375 F and prepare a muffin tin with non-stick spray.
Roll out puff pastry on a lightly floured work surface into a large rectangle. Cut the sheet lengthwise into 4 even strips, then cut across into 6 even strips. You will have 24 squares total (each square will be about 2-3 inches).
Separate the squares and press them into the mini muffin tins to create a cup.
Dice the brie Ito 24 pieces and add 1 to each cup. Top with 1 teaspoon of chutney, then sprinkle each cup with some chopped pecans.
Bake for 15-20 minutes or until the pastry is puffed, golden brown and the cheese I bubbly. If any of the brie has bubbled over, simply push it back into the cups while hot! Top with fresh rosemary or thyme and fruit if desired.
Once slightly cooled, remove from the muffin tin to serve! Serve hot or at room temperature.
