Ingredients

For the Buffalo Cauliflower

  • 1 head cauliflower, cut into bite sized florets
  • 1 cup flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1/2 cup Buffalo hot sauce (or more to coat)

For the Ranch (optional)

  • 1/2 cup sour cream (or vegan sour cream)
  • 1/2 cup mayo (or vegan mayo)
  • 1 tablespoon lemon juice
  • 1/2 cup blue cheese crumbles (optional)
  • 2 teaspoons fresh chives, chopped
  • salt to taste

Instructions

For the Buffalo Cauliflower

  1. Preheat the oven to 375 F and line two baking sheets with parchment paper.

  2. In a large mixing bowl, combine flour, garlic powder, onion powder, salt and milk to form a batter.

  3. Dip the cauliflower pieces one by one, coating evenly in batter, shaking off any excess and placing with space between each piece on the prepared baking sheets.

  4. Bake for 20 minutes on one side, flip, and bake for another 20 minutes on the other side. To make extra crispy, broil for the last 2-3 minutes! Make the ranch dressing while the cauliflower bakes.

  5. Remove from oven and toss to combine in buffalo sauce in a large bowl. Serve with ranch dip and enjoy!

For the Ranch*

  1. In a small bowl, mix together the sour cream, mayo, lemon juice, blue cheese (if using) and chives. Season with salt to taste.

Recipe Notes

*If you don't like blue cheese, omit or serve with your favourite ranch dip instead!
