Ingredients

  • 2 eggs
  • 1/2 cup sugar
  • 2 teaspoons vanilla extract
  • 1 cup sifted all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup melted unsalted butter
  • 2 tablespoons fresh lemon or orange juice
  • 1 teaspoon lemon zest (optional)
  • Icing sugar

Instructions

  1. Grease two Madeleine pans and preheat the oven to 375 F.

  2. In a large bowl with an electric mixer on medium speed, mix the eggs, sugar and vanilla together until light and foamy.

  3. In a medium bowl, sift together the flour, baking powder, and salt. Add it to the egg mixture and beat until smooth. Pour in the melted butter while mixing and mix until smooth. Add the zest and juice and mix until combined.

  4. Spoon the batter into the Madeleine pans to the 2/3 mark or pipe using a piping bag. Bake for around 10 minutes until golden brown and transfer to a cooling rack. Dust with icing sugar and enjoy.
