If you love the sweet-and-savory magic of a McGriddle, but want a healthier, make-ahead version, these McGriddle Egg Bites are for you! Packed with fluffy eggs, a touch of maple syrup, pancakes, and savoury sausage, they’re the perfect grab-and-go breakfast.
Preheat the oven to 350 F and grease 8 cups of a muffin tin. Fill a rimmed baking sheet halfway with water and place in the oven.
Heat a frying pan over medium-high heat. When the pan is hot, add the breakfast sausages and cook until golden brown and cooked through, around 5 minutes, turning occasionally. Remove from the pan and cut into thin slices.
Whisk the eggs with the cream and maple syrup.
Evenly distribute the sausages, cheese, and pancakes among the muffin tins. Pour the egg mixture on top, dividing equally among the muffin tins.
Carefully place the muffin tin on the baking sheet (it will sit in the water) in the oven. Bake for 16-20 minutes, until the eggs are set. Remove the egg bites from the pan and set aside to cool before placing them in an airtight container in the fridge until ready to eat! Store in the fridge for up to 5 days.
