Ingredients

  • 1 tablespoon oil
  • 1/2 cup panko
  • 2 heads romaine lettuce, roughly chopped
  • 1 green pepper, seeded & diced
  • 2 cups cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup shredded Parmesan
  • 50 grams pepperoni slices

For the Dressing

  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 6 tablespoons pizza sauce
  • 1/4 lemons, juiced
  • 1 tablespoon basil, roughly chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon rice vinegar
  • 1/2 teaspoon sugar

Instructions

  1. Heat the oil in a frying pan over medium heat. Add the panko and toast, stirring constantly, until golden brown. Set aside to cool.
  2. Whisk together the dressing ingredients.
  3. Assemble the salad with the romaine as a base, topped with the green peppers, tomatoes, red onion, mozzarella cheese, Parmesan and pepperoni. When ready to eat, top with the dressing and toasted panko.
