2heads romaine lettuce, roughly chopped
1green pepper, seeded & diced
2cupscherry tomatoes, halved
1/4red onion, thinly sliced
1cupshredded mozzarella cheese
1/4cupshredded Parmesan
50gramspepperoni slices
For the Dressing
1/2cupplain Greek yogurt
1/4cupmayonnaise
6tablespoonspizza sauce
1/4lemons, juiced
1tablespoonbasil, roughly chopped
1teaspoondried oregano
1/2teaspoononion powder
1/2teaspoonrice vinegar
1/2teaspoonsugar
Instructions
Heat the oil in a frying pan over medium heat. Add the panko and toast, stirring constantly, until golden brown. Set aside to cool.
Whisk together the dressing ingredients.
Assemble the salad with the romaine as a base, topped with the green peppers, tomatoes, red onion, mozzarella cheese, Parmesan and pepperoni. When ready to eat, top with the dressing and toasted panko.
