Ingredients

For the Dressing

  • 1/4 cup rice vinegar
  • 2 tablespoons low-sodium soy sauce or more to taste
  • 1 lime juiced
  • 4 teaspoons sugar
  • 4 teaspoons sesame oil
  • 2 garlic cloves minced
  • Salt to taste

For the Salad

  • 4 long English cucumbers thinly sliced
  • 2 red Thai hot chili peppers thinly sliced, or more to taste
  • 8 green onions thinly sliced on the diagonal
  • 1 cup fresh mint roughly chopped, plus extra to garnish
  • 1/2 cup roasted unsalted peanuts roughly chopped

Instructions

  1. In a small bowl, whisk together the dressing ingredients and set aside.
  2. In a large bowl, add the cucumbers, the hot peppers, green onions, and mint.

  3. When ready to eat, pour the dressing over and toss well to coat. Sprinkle with the crushed peanuts and garnish with extra mint if desired.
