Ingredients

  • 2 ¼ cups large flake oats
  • 1 cup milk
  • 2 eggs
  • 1 cup strawberries roughly chopped
  • cup maple syrup
  • ¼ cup vanilla Greek yogurt plus more to serve as desired
  • 2 tablespoons melted butter
  • 1 tablespoon vanilla
  • zest of 1 lemon
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup strawberries diced, plus more as desired
  • ¼ cup dark chocolate chips optional

Instructions

  1. Preheat the oven to 350 F and grease an 8x8" baking dish.

  2. To a blender add the oats, milk, egg, roughly chopped strawberries, maple syrup, yogurt, melted butter, vanilla, lemon zest, baking powder, baking soda, and salt and blend just until smooth, 30-60 seconds.

  3. Pour into the prepared baking dish and evenly distribute the diced strawberries and chocolate chips (if using) over top. Let rest for 10 minutes. Bake for 25-30 minutes, until a toothpick inserted in the centre comes out clean. Serve with additional Greek yogurt and strawberries, as desired.
