Ingredients

  • 20 cooked shrimp, chilled (deveined, tails removed)
  • 1/4 cup fresh lime juice (2-3 limes)
  • 1/2 cup finely diced white onion
  • 2 cups cherry tomatoes (quartered)
  • 2 avocados (diced)
  • 1/4 cup fresh orange juice (around 1/2 a large orange)
  • 1 jalapeno, seeded and finely diced (use less if desired)
  • 1/2 cup cilantro, roughly chopped
  • 2 tablespoons extra virgin olive oil
  • 1 clove crushed garlic
  • salt to taste
  • tortilla chips to serve

Instructions

  1. Mix all of the salsa ingredients together to combine: season to taste with salt. Serve with tortilla chips. May be made up to a day ahead and refrigerated (if doing so, only add the avocado just before serving).
