I am all for simple recipes, and this Shrimp Avocado Salsa is seriously amazing my friends. With less than 10 ingredients, it comes together so easy and is sure to give you instant ‘life of the party’ status!
I threw my dad a 70th birthday party and our family friend Marion brought this salsa over. It was the first thing to disappear! She was gracious enough to share the recipe with me… so that I could share it with you of course! It’s the perfect combination of fresh, lively flavours and just in time for Super Bowl! I am always on the hunt for new appetizers to make for guests, thanks for coming through for me Marion!
Around this time of the year I begin to get a little tired of hot soups and warm comfort food and this citrus-y dish is like a little taste of spring – bring. it. on. The scoopable tortilla chips are the bomb here (maximum dip:tortilla ratio). You can use regular corn tortilla chips to make it gluten free (you’ll just want to double check the bag for a gluten free symbol).
If you want to be a next-level host, serve this Shrimp Avocado Salsa alongside Cheryl’s Famous Guacamole and this Pico de Gallo. You’ll have yourself a platter with the best dips with tortilla chips. I HIGHLY recommend making the Vegan Queso out of our cookbook, it is beyond incredible and impresses the pants off of every one of our guests who have tried it. We have a mean recipe for Vegetarian Chili and Cornbread and Jackfruit Sliders that would also be amazing for serving at a Super Bowl party!
