This Cowgirl Salad will forever change your salad game! I know that’s a big statement, but I’m prime time in LOVE with this one and I know you will be too!

Avocados are rich in nutrients (including folate and potassium), carotenoids (like lutein), phytosterols, fiber, and monounsaturated fat, this versatile fruit doesn’t raise blood cholesterol (as many people may think), but rather may reduce it. In fact, despite it's high calories, avocado may help in weight control, possibly due to a unique sugar in it, D-mannoheptulose (which may block the effects of insulin and the breakdown of sugar) and because they are filling, consuming them may lead to eating fewer calories overall.
