To make dairy free ice cream (some call it “nice cream”) I use full fat coconut milk – the consistency is better versus using light coconut milk or a combination of coconut milk and coconut cream to add richness. It goes so well with all flavours I have tried (fruit, chocolate ….), and that hint of coconut flavour usually tastes even better than cream or milk. I used my Vitamix to blend up all my ingredients when making dairy free ice cream. Once smooth, pop it in a loaf pan lined with parchment paper and put it in the freezer. If you have an ice cream maker you can skip the blender and use your machine according to the manufacturer’s directions and transfer the mixture into the prepared loaf pan or another similar container of choice and freeze until ready to serve.

This easy 4 ingredient dairy free Coconut Mango Nice Cream, is a simple to make in a blander! It is such a special summer treat.
Ingredients
- 4 cups frozen mango
- 1 cup full fat coconut milk or coconut cream
- 2 tablespoons honey or maple syrup (or to taste)
- 2 tablespoons fresh lime juice
Instructions

Add all ingredients to a food processor or blender. Blend on high until smooth. Process in an ice cream maker until frozen if you have one.

Transfer the mixture to the loaf pan, smooth the top with the back of a spoon, and freeze until firm (about 30-60 minutes) before serving.

Hey! Yes you can! I have a recipe here for an Avocado/Banana one or a Raspberry one but replacing mango in the Coconut Mango recipe with any other fruit will work!! xx Tori

Could this work without an ice cream maker? After blending can it go into the pan and then into freezer?

Hi, I was so glad to find your recipe (after the fact). I had frozen mango, frozen banana, pinch of salt and vanilla and then about 1/2 can of coconut milk…. Except I couldn’t figure out why it was so sweet. I had used coconut crème! I see here you say you can add it for richness. It tastes great but it would be a lot less caloric if I had used regular coconut milk. Do you see any issues with what I did?

Hi! I’m so glad you enjoyed the recipe even with the coconut cream! Coconut cream is definitely richer and can add a natural sweetness due to its higher fat content. The good news is that switching to regular coconut milk will still keep it creamy, just a bit lighter.
What you did sounds totally fine—no issues at all! Did you add the honey or maple syrup from my recipe in? If so, you can skip next time if you want to cut back on sweetness further, especially with coconut cream since it already brings extra richness.
