Oh my gosh, these Cornflake Chews throw me right back into my childhood… they are so nostalgic for me! I’ve been making them since I was a little girl and they’re such a treat, everyone who eats them is instantly obsessed.
I try not to do Christmas baking until the very end… it’s the best way to resist temptation and of course have the freshest baking ever! I started making these no-bake Cornflake Chews when I was a little girl… in truth I have zero idea where my mom got the recipe.
Just to be clear, these are a ‘sometimes food’ – in fact, all of the cookies that I’m posting this week are! But we pick our favourites, eat them without guilt and move on.
These are straight from the 80’s and were the number one ‘cookie’ that my mom was asked to make on repeat growing up. They are sooo easy to make and freeze really well! This is a great recipe for the kids to make with you as it requires no baking.
Here’s a tip: when you spoon the mixture on to your parchment or wax paper, wet your hands a tiny bit and press them together lightly so that they stick together better.

Cornflake Chews
Cornflake Chews
Sweet, chewy, and crunch - these Cornflake Chews are a family favourite. Just be careful, they're highly addictive!
Ingredients
- 5 bars Mackintosh Toffee (45g bars)
- 3 tablespoons heavy cream
- 2 1/2 cups cornflakes
- 1/2 cup sliced almonds (lightly toasted)
- 1/2 cup large flake (ribbon) coconut (lightly toasted)
Instructions

In a large heavy pot on low heat melt the toffee bars with the heavy cream until melted, stirring occasionally. In a seperate frying pan toast almonds and coconut until golden, around 1-2 minutes.

Add the almonds, coconut and cornflakes to the toffee mixture and stir together well until combined.

Take a heaping tablespoon of the mixture and drop onto parchment paper or wax paper (just lay it on the counter). Using lightly wet fingers, shape into little mounds by pressing together lightly (wetting your hands helps prevent it from sticking). Cool before serving and store in an airtight container at room temperature for up to a week or in the freezer for up to a month.

These look delicious. But I am not a coconut fan. What could I substitute the coconut with? Can you really taste the coconut in this recipe?

You could substitute with extra almonds or extra cornflakes, I’m personally a big coconut fan tho so I haven’t tried it before!

These are great. I’m in USA and used Heath Toffee Bars, 5 of them.
I needed something quick and easy for a last minute get together.
These were gone so fast I thought I forgot to bring them in! I only ate a couple that I snuck in while filling the tub
