Back to school is right around the corner (gulp!) and my mom brain is already thinking of school lunch ideas and healthy snacks for Max and Charlie. These cherry muffins are moist and not too sweet with a touch of citrus and a healthy dose of fibre… not that you can tell!
These Plum Oat Bran Muffins are moist and not too sweet, perfect for a morning run-out-the-door breakfast or an afternoon snack. I used plums, but you can use any soft fruit you want (nectarines, peaches…)!
I vowed that, as a part of my New Year’s Resolution for 2016, I would plan and prepare better. A big part of this is getting ready for the week ahead of time to avoid hectic mornings that are simply not a good start to any day!
