For anyone who is following a gluten free diet and has been missing that slice of pie at Thanksgiving (or any other special occasion of the year), this gluten free pie crust is your answer! A few easy-to-find ingredients help transform regular gluten free flour into something special here. Crank up your ovens my friends!
Gluten free baking isn’t for sissies. Seriously, it is SO HARD! I do my best to create recipes that can be adapted to meet a variety of dietary needs, and this pie crust did the trick for those needing a gluten free alternative like so many members of our family. Now… is it as good as my old fashioned regular pie crust? Well not quite, but it was as good as we have tasted for a gluten free variation.
In case you are wondering, I don’t recommend a gluten free diet across the board for people unless they truly have issues with gluten. If you’re worried that you may belong to that camp I would strongly suggest seeing a registered dietitian trained in that area and/or your primary healthcare provider to discuss it.
Now just to be clear, this is still indulgent pie crust; gluten free and all. But pie is something that I only eat a few times a year, and I can imagine that if you’re someone who really enjoys a good slice of pie that this may be that recipe you’ve been looking for to fit those special occasions in your family!
The xanthan gum acts as a binder to help keep it all together and the spices add a little warmth and flavour to the recipe as I find that without it the crust tastes a little bland. You can adjust spices if you wish!
Since we are coming up on Thanksgiving here is my gluten free pumpkin pie recipe that our family loved! You can also make it without crust all-together (in which case click out of this post haha!)… we did that here (I make it like this all the time to be honest).

Gluten Free Pie Crust
This gluten free pie crust is a great alternative to the real deal for when you need to adapt your old fashioned favourite! There is a vegan option here too!
Ingredients
- 2 cups gluten free 1:1 flour blend (we used Bob's Red Mills)
- 1/2 teaspoon xanthan gum
- 1 tablespoon brown sugar, packed
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup vegetable shortening
- 1/2 cup cold butter or vegan butter
- 3-4 tablespoons ice cold water
Instructions

Add the flour, xanthan gum, brown sugar, salt and cinnamon to a food processor or large bowl. Pulse or mix to combine.

Add the shortening and butter and pulse (or mix with hands or a pastry blender) until the butter is the size of peas. Slowly add the ice water 1 tablespoon at a time, pulsing or mixing in between until the pastry just holds together when pressed gently against the side of the bowl.

Empty the pastry on to a sheet of plastic wrap, form into a flat disc, wrap tightly in plastic wrap and refrigerate for at least 1 hour before rolling out and baking (bake according to your pie recipe once the filling is in!).
