This salad takes all but 10 minutes to pull together and is a great side to these Crockpot Sliders, Veggie Burgers or Crispy Cauliflower Sandwiches.

Cowboy Caviar is like a cross between a bean salad and a salsa! It combines beans with a colourful array of fresh and frozen vegetables, fresh lime and cilantro. Super flavourful and totally inspired by our love for Yellowstone.
How To Eat Cowboy Caviar
Honestly the sky is the limit here! Enjoy it as a salad, a salsa for tortilla chips, as a taco or nacho topping, stuffed into a burrito, or with your morning eggs. It tastes great cold and keeps well in the fridge (4-5 days) making it a good dish to meal prep.

This recipe is part of my Yellowstone Themed Menu! If you don’t know what I am talking about (lol), Yellowstone us a TV show I am in lovvveeee with. The coles notes is it is a drama series about a ranching family in Montana. It’s full of edge-of-your-seat level dramatic scenes, amazing acting and some good looking cowboys! Ingredients
- 398 ml can black beans rinsed & drained
- 1/2 cup canned or frozen corn
- 1/2 cup diced red pepper
- 1/2 cup diced orange pepper
- 1/4 cup finely diced red onion
- 1 diced avocado
- 1/4 cup chopped cilantro
- 3 tablespoons olive oil
- 1 garlic clove minced
- 2 tablespoons fresh lime juice
- 2 teaspoons cumin
- pinch of sugar
- salt & pepper to taste
Instructions

Combine all of the ingredients in a medium bowl and mix. Serve cold as a salad or with tortilla chips as a salsa!
