There’s no better way to a man’s heart than through his stomach … and these Banana Bread Pancakes will get dad’s day off to the best start! I mean, who doesn’t like a tall stack of fluffy pancakes first thing in the morning, right?
Making pancakes is a regular family affair at our home on the weekends, and the kids are always involved… as messy as it is (it’s so worth the mess for the record)! Max is an especially colourful addition to the kitchen… his fun little demeanour is the best (Charlie is such a rule follower, and Max… not so much).
The kids and I wanted to make Banana Bread Pancakes for Charles before golf today and this is our recipe. It is so awesome finding ways for Charlie and Max to learn to cook using tools like the Vitamix that make it easy breasy (with a little help from us of course). Now, if only there were something that made cleaning up that simple!
You can use regular all-purpose flour instead of whole wheat flour if that is what you have on hand – but of course the whole wheat flour is more nutritious! A gluten free flour blend like Bob’s Red Mill should work too if you want to make them gluten free.
If you’re looking for a completely vegan pancake recipe look no further than this one. You can slice bananas on top of them or add any fruit. And if bananas aren’t dad’s ‘thing’ here is the recipe for my original Angel Cakes – basically buttermilk pancakes from heaven!
Happy Father’s Day to all the men in your lives! I am so blessed to have the most amazing dad in the universe who has a heart of pure gold, is sweet and generous and kind and funny and all the things we need more of in the world. And of course Charles is SUCH a good dad, our boys are so so loved.

Here’s the one-step recipe!
Banana Bread Pancakes
Fluffy whole wheat Banana Bread Pancakes that are made in the blender in one step - making it so easy for kids to help create them!
Ingredients
- 2 ripe bananas peeled
- 2 cups buttermilk or any milk combined with 2 tablespoons white vinegar and left to sit for 5 min
- 2 ½ cups whole wheat flour
- ¼ cup sugar or coconut sugar
- 2 eggs
- 3 tablespoons melted butter or vegan butter
- 2 ½ teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- ½ teaspoon salt
Instructions
-
Using our Vitamix blender, bend all of the ingredients together for 20 seconds on level 8, scrape down the sides with a rubber spatula, and blend again on level 8 for another 30 seconds.
-
Heat a medium frying pan on medium-low heat, add oil, and add a scoop of pancake batter. Cook until bubbles appear and the bottom is golden brown, flip and cook until the other side is golden brown. Repeat with the remaining batter. Top the pancakes with sliced bananas and drizzle with maple syrup. Makes about 10 pancakes.

Can I ask how you measure your flour? I’ve tried this recipe twice but the pancakes have turned out very flat. I have a feeling I don’t have enough flour. Thanks!
Tori Wesszer says
Hi Diane,
I scoop it (in the canister) and level it so it may be a bit more flour than if you spoon it in!
Ashley Kern says
Hi!
Just wondering I have left over batter can I keep it stored in the fridge?
Thanks!
Melanie says
Mmmm yummy!! Do you this recipe would work ok with an immersion blender? Thanks 🤗
Tori Wesszer says
Hi Melanie I think it would though I haven’t tried it – let me know if you do!
Annie says
What are your suggestions for making this if you don’t have a Vitamix blender. They look delicious!
Tori Wesszer says
Hi Annie do you have any blender? You could try an immersion blender!
Katie says
Can coconut flour or almond flour be substituted?
Tori Wesszer says
Hi! I think you could try the coconut flour or a blend of the two – I am not sure if substituting all almond flour would work as they would be quite heavy.

I have made this twice with an immersion blender and it works totally fine ! It’s a great recipe …. and makes tons of leftovers in a one person household, so I freeze them and pop them in the toaster when I want to eat them.

Awesome!!
Michele says
Lesson learned- we have celiac and I substituted rice flour. Fail! Runny and gritty abd thin! Ran off the skillet in a puddle. 😢
Diana says
I love these pancakes!
I was wondering if adding a flax egg instead of one of the eggs would work?
Tori Wesszer says
Hi Diana I haven’t tried but it should work! Thanks for taking time to rate the recipe!
