Chicken Parm Smash Tacos
Craving a crispy, cheesy, quick dinner? These Chicken Parm Smash Tacos are ready in under 30 minutes and are an instant family favourite
Ingredients
For the Tacos:
- ½ cup panko
- 1 lb ground chicken
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon dried oregano
- ¼ cup shredded Parmesan plus extra to serve
- 8 small tortillas
- 1 cup marinara sauce
- 190 grams fresh mozzarella cheese sliced
To serve:
- 3 cups arugula
- 3 teaspoons olive oil
- Salt & pepper to taste
- 2 tablespoons basil roughly chopped
Instructions

Preheat the oven to broil and line a baking sheet with parchment paper.

In a pan over medium-low heat, add a drizzle of olive oil. Once hot, add the panko and stir constantly until slightly browned, about 4 minutes. Remove from the heat and set aside.

In a bowl add the ground chicken, onion powder, garlic powder, dried oregano, and Parmesan. Mix well to combine.

Divide the ground chicken mixture equally amongst the tortillas, thinly layering each portion on one side of each of the tortillas.

Heat a frying pan over medium high heat. When the pan is hot, add a small drizzle of olive oil. Add the tortillas with the chicken mixture side down and cook for 2-3 minutes, until the chicken is lightly browned. Flip and continue cooking until the ground chicken is cooked through and the tortillas are golden brown, about 2 minutes.

Remove from the pan, place on the baking sheet, and top each taco with 2 tablespoons marinara sauce and slices of mozzarella. Place in the oven on broil for 3 minutes to melt the cheese. Keep a close watch on them to ensure they don’t start to burn.

Toss the arugula with the olive oil and season with salt and pepper.

Top the tacos with the crispy panko and basil and serve alongside the arugula, with extra Parmesan if desired.

I’m interested in making these for Father’s Day, but I’m very confused about how you cook the raw chicken mixture. Do you spoon the mixture onto half of an open face tortilla and then fold it over so it’s closed and then cook each side? In the photos the tortillas are open faced, so I’m not sure how you cook it without your mixture spilling out everywhere. And will the ground chicken cook fully through the tortilla? Could I just pre-cook the ground chicken mixture separately and then put it on the tortilla? Sorry if I’m missing the obvious here lol but I need some help! Thank you in advance.
Hi Jessica! Sorry for the delay here! If you watch this instagram reel it may help you see the process best. You spoon and spread to mixture into a thin layer on one side. It will stick and does not spill or fall off! No folding in half, just cooking face down in a pan, then flipped over to crisp the other side too. No need to pre-cook the ground, it is a thin layer that does get cooked through. Let me know if this helped! xx Tori
