I had the chance to partner with Patience Fruit & Co on the release of their new No Added Sugar Dried Cranberries (a market first and the best dried cranberries I’ve ever tried, by a landslide), and wanted to create a unique recipe that I knew you would all love. I’ve tried so many of their products and love them all!
These dried cranberries are certified organic, a very high source of dietary fibre and only contain 2 grams of sugar per 40 gram serving (unlike other dried cranberries on the market that have added sugar). They also happen to be gluten-free and are certified non-GMO.
The Patience Fruit & Co dried cranberries are soft and tender and slightly tart, perfect for snacking on or cooking with! I recommend throwing them into a healthy cookie dough, muffins or a homemade trail mix. Or making these little dark chocolate clusters of course!
I like a sweet treat just as much as the next person, but am pretty fussy about what I indulge in. I love dark chocolate because a little goes a long way in the satisfaction department. Dark chocolate is higher in antioxidants than milk chocolate (white chocolate has none of these benefits) and is far more satisfying as far as I’m concerned!
To help you keep your treats portion controlled we made this easy and showy little Dark Chocolate Cranberry Nut Clusters using the Patience Fruit & Co dried cranberries sprinkled with nuts and seeds. You can use any type of nuts you wish: I used pecans, cashews, pistachios and pumpkin seeds. I also sprinkled a touch of salt on some of them to take them to the next-level! I used Himalayan pink sea salt but you can also use fleur de sel.

Dark Chocolate Cranberry Nut Clusters
Ingredients
- 300 grams dark chocolate chopped
- 142 gram package Patience Fruit & Co dried cranberries (you won’t use them all)
- ½-¾ cup mixed nuts and seeds
- Fleur de sel or Himalayan pink salt (optional)
Instructions

Line two baking sheets with parchment paper.

Melt the chocolate in a double boiler (heat-proof bowl over a simmering pot of water) or in the microwave until smooth. Note that if you’re melting it in the microwave you will need to stir it every 30 seconds.

Drop teaspoons of melted chocolate to create little circles or discs on the parchment, leaving a small amount of space between each, with all of the chocolate.

Arrange the dried cranberries and nuts and seeds on top of the chocolate discs.

Freeze the trays for 15-20 minutes or until the chocolate is set. I like to store them in the freezer in an airtight container for a quick snack!
