Jams are typically packed with sugar and lack that fresh fruit taste. I LOVE freezer jam because you can whip it up in minutes, it has half the sugar of regular jam, and it tastes amazing! Wow the pants off of your next brunch crowd with a batch of fresh jam.
Here’s how:
- 4 cups of soft ripe fruit, washed and diced (I used a mix of apricots & peaches)
- 1 1/2 cups of sugar
- 1 package of Bernardin Freezer Jam Pectin
Directions:
In a large mixing bowl, combine the freezer jam pectin and sugar and stir until blended. Add the fruit and stir for 3 minutes, until well-blended. Ladle the jam into jars (plastic ones work best for freezing) and let it sit for 30 minutes, until thickened. Freezer for up to a year or refrigerate for up to 3 weeks. Yum!
