Homemade Vanilla Cherry Ice Cream made with fresh cherries is one of the best indulgences of an Okanagan summer! For those of you wanting the ‘real deal’, this ice cream will do the trick. You simply can’t go wrong!
You scream, I scream, we all scream for cherry ice cream! I love making ice cream and typically I make what I like to call ‘nice cream’ which is simply dairy-free ice cream. This recipe is the traditional “real deal”, but you can use coconut cream and coconut milk instead of the cream and milk should you wish.
Homemade Ice Cream
I know owning an ice cream machine sounds kind of unnecessary but let me tell you….Don’t knock it ’til you’ve tried it! We honestly use our machine a lot, it was a thoughtful wedding gift from my cousin Jillian. The ice cream maker turns out the creamiest ice cream and is surprisingly easy to use. Next time you think of spoiling yourself with a kitchen gadget, I recommend you consider it!
Homemade ice cream with a machine is SO easy. No machine? I pop my mixture into a metal baking pan and into the freezer. It will work just fine (will just be less smooth and harder to scoop)! Give some of my other recipes a go: try this Coconut Mango version or this refreshing Avocado Lime dairy free “nice cream”.
Cherry Recipes
I am lucky enough to have a cherry tree of my very own at home. Although it didn’t produce a ton this year (it was a rough year for cherries here), I am lucky enough to live in the Okanagan where cherry orchards and fruit stands are seemingly everywhere. If you can snag some fresh cherries then I have the recipe you need. As an Okanagan gal, I am basically a cherry (eating) expert.
Vanilla Cherry Ice Cream
Vanilla Cherry Ice Cream
For those of you wanting the ‘real deal’, this ice cream will do the trick. Dotted with chunks of fresh ripe cherries with an old-fashioned vanilla ice cream base, you simply can’t go wrong.
Ingredients
- 2 cups diced fresh cherries
- 2/3 cup + 2 tablespoons sugar divided
- 2 cups cold whipping cream (33-35%)
- 1 cup cold whole milk (3.5%)
- 2 teaspoons vanilla
Instructions
-
Combine the diced cherries and the 2 tablespoons of sugar in a small bowl: mix together and set aside.
-
In a large bowl, combine the cream, milk, vanilla and remaining sugar and whisk until the sugar is dissolved. Add the cherries (including the juice) and stir to combine.
-
Process the mixture in the ice cream maker according to the manufacturer’s directions.
-
Once done, pour the mixture into a freezer safe container or a loaf pan lined with parchment paper and freeze until firm, approximately 2 hours, before serving.
