I loooovvveee spring! The flowers, recipes and fun DIY’s are some of the many reasons why. This Easter we will of course be doing an Easter egg hunt in the yard/around the house for Charlie and Max (most likely in our cute matching PJ’s!). The days are getting warmer and longer, and this mama is feeling SO happy about it!
Our family usually has a giant get together for Easter and goes all out. A couple years ago, Jillian did this incredible Easter egg hunt for the kids and Justin dressed up in a giant Easter Bunny costume and greeted the kids. It was incredible. We will miss our family terribly again this year like many of you, but I’m going to do my best to make it as special as we can with our little family of 4!

Speaking of which, I completely forgot that we did a ‘Dietitian’s Easter Egg Hunt’ two years ago for the kids and it’s actually lasted the year – such a fun healthy spin on a traditional Easter Egg Hunt that you can use all year long (a little chocolate never hurts too!).

These Easter eggs are so pretty and make for a fun kitchen experiment for the kids! I would love to hear if you try them out – or if there are any foods that I missed that you can use for this project!
Easter Dinner Menu
While you may not be entertaining in full force this year (or have a flower shop that is open), why not make the occasion special and dress up the table with whatever you may have on hand? Here is a bit of inspiration for you. I really love the egg cup flower holders for the table if you have them, and the kids can pick any flowers from the garden if you have any poking up at this time of year!

My FAVOURITE – I love this so much! We used these foam eggs from Michaels that I will reuse every year and love them. Totally doing this again!
No-Bake Chocolate Haystack Cookies
Oh my gosh, this healthier rendition of these cookies that bring me back to my childhood are incredible! You can make them into little nests and put a few chocolate eggs into the centre for the kids (big or small lol!).
Sicilian Citrus Ricotta Bundt Cake
This cake is super moist and packed with lemon – I may just have to deliver one of these to my sweet parents as a gift – it is my mom’s favourite!
Carrot Cake Waffles or Pancakes
How perfect for Easter brunch? You can easily make these ahead and just pop them on the toaster after the Easter egg hunt is over for a quick breakfast!
Lemon Almond Ricotta Cake
Another favourite, this cake is moist and delicious and dense and basically perfect. A slice of the with a cup of tea and life is complete.
Rum Raisin Hot Cross Buns
Soaking the raisins in rum is completely optional (ie: if you are serving them to kids), but it’s an interesting variation on this classic recipe.
Spring Salad w/ Lemon Vinaigrette
I love it when food looks this gorgeous! You can use any spring veggies to dress up your salad – don’t worry if you don’t have these specific ones on hand. I highly recommend adding some greens to each meal wherever possible.
Seafood Linguine
A bright and springy pasta, this uses frozen peas and shrimp for a low maintenance pasta that tastes sooo good! It’s a nice change from the typical large heavy meal that is served for Easter.
