Energy balls are a healthy on-the-go snack, usually comprised of oats, some sort of nut butter, a sticky binder like honey or syrup, and basically any additions under the sun (like fruit or nuts). I love to add in flax seeds, hemp hearts or chia seeds as well! They take just minutes to prep, can last 2 weeks in the refrigerator or in the freezer forever (or until you remember they are in there and immediately eat them…..), and are endlessly adaptable to your favourite flavours.
How To Make Almond Joy Energy Balls
For this recipe, I combine all my ingredients into a food processor to get the consistency where I want it. Most energy ball recipes can just be mixed by hand, but for this one I wanted to get the coconut and dates really well combined! Once rolled into a ball, I coat each 1 tablespoon size ball (think little golf ball!) with coconut milk and roll in shredded coconut. You can skip this part or do half of them with it if you wish.

Almond Joy Energy Balls
These no-bake Almond Joy Energy Balls pack all the same flavour of it’s namesake candy bar, take minutes to throw together, are loaded with good-for-you ingredients, and make for an easy and healthy breakfast or snack.
Ingredients
For the Balls
- 1 cup large flake oats
- 1 cup toasted raw almonds
- 1/3 cup cocoa or cacao powder
- 1 cup shredded coconut
- 1 teaspoon almond extract
- 1 teaspoon vanilla
- 1 cup pitted dates (I used Medjool)
- 1 tablespoon maple syrup
- 1/4 cup coconut milk ( I used canned)
For the Coating (optional)
- 1/4 cup coconut milk
- 1/2 cup shredded coconut
Instructions
For the energy balls

Place all other ingredients except the coconut milk in a food processor and process until it is smooth and starts to stick together, about 2 minutes. Slowly add the remaining (1/3 c.) coconut milk in a stream until it the mixture holds nicely together when pressed with your fingers. You may not need all of the coconut milk.
For the coating

Put ½ cup of the shredded coconut and 1/4 cup of coconut milk in separate shallow bowls and set aside.

Roll a tablespoon of the mixture in your hands to make a ball, immerse each ball in coconut milk (so that the coconut sticks), and roll in the shredded coconut to coat. Repeat with the remaining mixture.
