To be honest, this dressing is exceptional. We actually perfected this a long time ago and added it to the Fraîche Table meal plan, but it felt like the perfect opportunity to use it here. If it ain’t broke, don’t fix it!
This is one of my all-time favourite dressings, and you’ll see why once you take your first bite. Substitute a seed butter for the peanut butter to make this nut free should you wish.
Healthy Salad Ideas
I love salads, but as someone who grew up in a “meat and potatoes” family, I am aware not everyone feels the same. I think a lot of the misconceptions about salads come from the idea that they are ‘boring.’ I like to make it my personal mission to make exciting, healthy, fresh salads! Chopped Salad with Sesame Peanut Dressing
This Chopped Salad with Sesame Peanut Dressing is vibrant, crunchy and bursting with flavour. It is great meal prepped ahead (not tossed in dressing) with a big batch of the Sesame Peanut Dressing stored in the fridge.
Ingredients
- 1 head Romaine, finely chopped
- 1 cup diced yellow pepper
- 1 cup diced red pepper
- 1 cup thinly sliced purple cabbage
- 1 cup julienned carrots
- 1/4 cup sliced green onion white and light green parts only
- 1 cup diced cucumber
- 1/4 cup crushed peanuts
- 1 avocado, sliced to garnish
Peanut Sesame Dressing
- 1 teaspoon grated ginger peeled
- 1 tablespoon sesame oil
- 1/4 cup smooth natural peanut butter
- 1/4 cup low sodium soy sauce
- 3 garlic cloves, minced
- 2 tablespoons maple syrup
- 1 lime, juiced
- 1 tablespoon rice vinegar
Instructions
For the Salad

Combine all of the salad ingredients (except the avocado) in a large shallow bowl (section the ingredients for pretty presentation). Store in the fridge, covered, until ready to serve. When ready to serve, toss to combine with the Sesame Peanut Dressing.
For the Dressing

Whisk together all ingredients in a small bowl or in a mason jar and refrigerate until ready to use.

I make it all the time (and love it). So nice and healthy and the sauce is so tasty. I only alter the recipe slightly (cilantro instead of green onions). : )
