My go-to method includes searing the chicken breasts with a drizzle of oil in a hot non-stick pan on both sides until golden brown, and then finishing them in the oven. It’s fast and simple with no brining or marinating needed. Just add a good flavoured seasoning rubbed all over the chicken and let your oven really do the bulk of the work! The pre-oven sear on both sides provides the perfect amount of browning that the chicken needs before baking.
Note: you’re going to want to use some of those pan juices at the end. Drizzle before serving!
Cooked Chicken Temperature
If unsure your chicken is cooked through, use a meat thermometer. It should read 165°F (75°C) when inserted in the thickest part of the meat.

Seasoning chicken doesn’t have to be anything complicated. I love a mixture of salt, pepper, paprika, garlic powder, onion powder so I figured why not make a homemade seasoning?! Make a big batch and toss it on chicken anytime. This also tastes great on vegetables and basically ANYTHING.
Combine equal part salt, pepper, garlic powder, onion powder and paprika for a classic seasoning that can be used in multiple ways.

Ingredients
For the Seasoning
- 1 tablespoon salt
- 1 tablespoon pepper
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 tablespoon paprika
For the Chicken
- 1 tablespoon olive oil
- 4 boneless skinless chicken breasts
Instructions

Preheat oven to 400 F and prepare a medium baking dish or sheet.

Dry the chicken breasts with a paper towel and season the chicken breasts on both sides.

In a medium frying pan over medium-high heat, add the oil and sear the chicken until golden brown on each side using tongs to flip it.

Transfer the chicken to the prepared baking sheet or baking pan and bake until the chicken reaches an internal temperate of 165 F, around 15-20 minutes depending on the size of the chicken breasts. Rest for a few minutes before slicing.
