I adore the contrast of sweet and salty. The pops of fresh grapes against the salty feta are so delicious! With the added touch of mint and the slight crunch of the quinoa, this salad makes an awesome light lunch or side to dinner (would be dreamy with grilled salmon or chicken). The flavours are very light and reminds me of something you would get served at a spa. The quinoa base packs a protein filled punch (plus, it’s gluten-free) making this the perfect meal to fuel you for a busy day.
Healthy Salad Toppings
Add a little somethin’ somethin’ to your salad, BUT make it healthy! This quinoa salad would taste great with the additions of nutritious seeds.

Minted Feta, Grape & Cucumber Quinoa Salad
Ingredients
For the Salad
- 3 cups cooked quinoa
- 1 long English cucumber sliced
- 1 cup seedless red or green grapes cut in half
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh mint leaves chopped
- 2 green onions sliced
For the Dressing
- 1/4 cup olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon lemon juice
- 1 tablespoon honey or sugar
- 2 teaspoons Dijon mustard
- 2 garlic cloves minced
- salt & pepper to taste
Instructions

Prepare the quinoa and set aside to fully cool.

In a large bowl, add the quinoa, cucumber, grapes, feta cheese, mint and green onion: toss to combine.

In a separate small bowl, combine the dressing ingredients. Mix well and stir into the salad (to taste), tossing to combine.

Season with salt and pepper and enjoy!

I made this recipe as an Easter dinner dish. It was a hit with everyone. The ingredients are a unique and fresh combination and the dressing is delicious! Adding honey to the dressing is a must! I’ll definitely make this salad again!
