A glass of chilled rosé goes great alongside this sweet and spicy seafood recipe is the perfect combination for an afternoon on the patio. Crispy rice is a little crispy rice cake made from rice. Simply press your cooked sticky rice into a pan or dish lined with plastic wrap, cover, and chill overnight. The next day you will be able to cut the rice into little cakes and fry them until crisp on the outside (while remaining soft on the inside). The best part comes after that! Crispy rice has been trending allllll over Tiktok and I am totally here for it. There are so many Tiktoks of people making these cute little crispy rice cakes with delicious toppings, inspiring me to do this version of my own. The secret is truly in my two ingredient special sauce!
Homemade Sweet & Spicy Sauce
All you need is TWO ingredients for such a delicious sweet and spicy sauce for almost anything. I feel like this may sound too good to be true but this is the real deal. Grab some mayonnaise and sweet chili sauce and get mixing! It is the combination you didn’t know you needed, and tastes great on this shrimp in this recipe but could be used in so many other ways. I love an easy sauce.

Crispy Rice with Sweet & Spicy Shrimp
Ingredients
- 2 cups cooked sushi rice
- Oil for frying
- 1 lb cooked shrimp tails removed, finely diced
- 1/4 cup mayonnaise
- 1 tablespoon sweet chili sauce
- 2 green onions, thinly sliced plus extra for garnish
- 2 avocados, sliced thin or mashed
- Sesame seeds to garnish
- Soy sauce to serve
Instructions
For the Crispy Rice:

Use an 9×9" baking dish or a dish of similar size and line with plastic wrap. Pour the cooked sushi rice into the baking dish and tightly pack the rice (wet hands if needed). Pop in the fridge to chill for 1 to 2 hours or overnight or until it is cold and easily can be sliced. Cover if refrigerating overnight.

After the rice is chilled and set, cut the rice into about 20 (or so) squares or rectangles with a sharp knife.

In a large non-stick pan, add oil over medium high heat. Once the oil is hot, add the rice bites and shallow fry on each side in batches until golden brown, careful to not over-crowd them.

Transfer the cooked rice bites to a wire rack or paper towel to drain any excess oil and repeat with the remaining rice.
For the Sweet & Spicy Shrimp:

In a bowl, stir together the shrimp, mayonnaise, sweet chili sauce and sliced green onions.
To Assemble:

Place the thinly sliced (or mashed, if preferred) avocado on top of the fried rice bites.

Add about 1 tablespoon of the sweet and spicy shrimp mixture on top of the avocado. Garnish with a sprinkle of sesame seeds and extra green onion and serve with soy sauce if desired.
