Granny’s Borscht (vegan option)

Dietitian Tori Wesszer shares her granny's recipe to show you how easy it is to make wholesome, healthy borscht that's so delicious!

I bought a heap of beets the other week to make lazy beet rolls the other week (beet greens are THE BEST), and was left with a bit of a beet overload situation on my hands.  It’s noon on Sunday and I’m still in my PJ’s BUT I have a big pot of this soup on the stove to prove that I’m not a total slouch!

We grew up on borscht, and I only learned how to make it about a year ago from our granny.  I was shocked at how simple it is!  This is such a healthy soup, full of vitamin C, fibre, potassium and rich antioxidants.  I can’t say that about EVERY Ukrainian dish, but this one is a winner in the healthy department.

 

There are many versions of borscht: this one is a vegetarian borscht, commonly referred to as spring borscht (you don’t have to add the cream, it’s up to you!). You will want to ideally have a mandoline (linked below) or a food processor that can coarsely shred the beets as it is a bit of a tedious job otherwise. I know that this is strange advice coming from a dietitian, but you don’t want to scrimp on the salt on this one; like any soup it needs it for the flavour.

 

Serves 8-10

Ingredients:

  • 4 c. diced peeled beets
  • 1 small yellow onion, diced
  • 2 c. diced carrots
  • 2 c. frozen peas
  • 12 c. water
  • ¾ c. chopped fresh dill
  • salt to taste
  • whipping cream to serve (optional)

 

Directions:

Place the beets, onions and carrots in a large pot. Cover with the water, bring to a boil, and let simmer for about 20 minutes, add the peas, then simmer for an additional 25 minutes or until the vegetables are cooked. Add the dill and salt to taste and serve with whipping cream if desired. 

It’s as easy as that! Enjoy!!!!

    My family is also ukrainian and growing up my grandma made all the traditional ukrainian meals including borscht. I love that there’s so many different ways to make it too! Can’t wait to give this recipe a try! 😋

    Hello 🙂 This was the first borscht that i have ever attempted…I grated the beets…I have since found a mandolin…(I may or may not have included a little knuckle skin….ooooops!) it was delicious!!! sooo simple and great. I used some of my homemade bone broth too as part of the liquid. Your photo of the finished produce caught my eye…sooo inviting.

Priorities. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Thinking about them a lot these last few days. I’ve been reading the book ‘Untamed’ by @glennondoyle (have you read it? love to hear your thoughts), and it’s made me really think. My last post was sharing our story of my dad’s journey with  Alzheimer’s. We are so lucky to have him at such an early stage of the disease, fully himself.  He is such a gift to us and the world. Jillian posted something about high functioning anxiety the other day, and I checked most (ok all) of those boxes ... ugh.  The irony is that I live a lot in the future, a little busy body, not really taking the time to enjoy the present - but one day, should I have the same disease as my dad (50% chance), I will truly only have the capacity to live in that moment.  It stopped me dead in my tracks. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Travels with this crew... 🤍
My parents & Jillian’s (our moms are sisters) have always travelled together and have had THE MOST incredible adventures (our dads are ridiculously witty - literally the funniest humans). Looking back I can guarantee that those are some of their best memories.
