Crispy potatoes hold a special place in my heart, and this is such a great way to switch up your side dish game. These go well with diverse dishes and are fun to make (it’s like cutting cookies!). They act as a hearty side dish that’s is sure to fill your plate (and home) with the sweet aroma of fresh rosemary. Plus, they sure look cute! You will need some good quality fresh potatoes and a mini heart-shaped cookie cutter for this recipe. Involve the family and let them take part in the action.
How to Make Heart-Shaped Fries
Boil your potatoes for about 15 minutes, and remove to let cool. Once cool enough to touch, slice the potatoes into 1/2″ thick slices. Then, use your heart-shaped cutter to cut out as many shapes as you can (this part will really depend on the size of your cutter). then you can move on to tossing in oil and rosemary and roasting! If you want to save your potato discards, this would be great to use in a Potato Broccoli Soup!
How to Pick Potatoes at the Grocery Store
Do you know how to find the perfect potato match? Look for potatoes that are firm and don’t have a green tint (greenish potatoes contain solanine, which has a bitter flavour). Also, choose ones without cuts, bruises or other discolouration!
How to Store Potatoes
Potatoes are one of the BEST stapes to have on hand. When stored properly, they can really last a long time! Tips for storing include:
- Store in a cool place – but do not refrigerate!
- Keep away from light – they like the dark!
- Make sure they have good ventilation – an open paper bag, a mesh bag, or basket. No plastic bags please!
Is Rosemary Healthy?
Ah! The smell of a fresh rosemary sprig! This herb goes well on so many dishes and I love to use it on the regular. What’s even more lovely that the taste and smell? Rosemary is a source of antioxidants and anti-inflammatory compounds, which are thought to help boost the immune system and improve blood circulation. In any case, it tastes amazing so I highly recommend it;)

- 1 tablespoon fresh rosemary, chopped
Instructions

Preheat oven to 450 F and prepare a baking sheet with parchment paper.

-
Place the heart shaped potatoes on a baking sheet lined with parchment paper and toss with the olive oil, sea salt and rosemary. Bake until golden brown, about 15-20 minutes, turning the potatoes over once half-way through baking.
