Strawberry Blender Oat Cake
This Strawberry Blender Oat Cake is wholesome meets indulgent: a naturally sweet, cake-like breakfast that tastes like dessert but fuels your morning with feel-good ingredients.
Ingredients
- 2 ¼ cups large flake oats
- 1 cup milk
- 2 eggs
- 1 cup strawberries roughly chopped
- ⅓ cup maple syrup
- ¼ cup vanilla Greek yogurt plus more to serve as desired
- 2 tablespoons melted butter
- 1 tablespoon vanilla
- zest of 1 lemon
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup strawberries diced, plus more as desired
- ¼ cup dark chocolate chips optional
Instructions

Preheat the oven to 350 F and grease an 8×8" baking dish.

To a blender add the oats, milk, egg, roughly chopped strawberries, maple syrup, yogurt, melted butter, vanilla, lemon zest, baking powder, baking soda, and salt and blend just until smooth, 30-60 seconds.

Pour into the prepared baking dish and evenly distribute the diced strawberries and chocolate chips (if using) over top. Let rest for 10 minutes. Bake for 25-30 minutes, until a toothpick inserted in the centre comes out clean. Serve with additional Greek yogurt and strawberries, as desired.
