Layers of russet potatoes, sweet potatoes, and beets are tucked into a garlicky béchamel sauce and topped with a generous blanket of bubbly, golden Gruyère cheese. The beets turn everything the most beautiful shade of pink, making this dish an absolute showstopper on your Thanksgiving table.
This gratin is the kind of recipe that looks like you spent all day in the kitchen (don’t worry, I won’t tell anyone otherwise).

Cheesy Root Vegetable Gratin
Ingredients
For the Béchamel:
- 3 cups whole milk
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 garlic cloves minced
- 2 teaspoons fresh thyme leaves plus more for garnish
- 1 teaspoon salt plus more to taste
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground nutmeg
- 2 tablespoons softened butter for greasing the dish
For the Gratin:
- 1 1/2 pounds russet potatoes peeled and thinly sliced into rounds
- 1 1/2 pounds sweet potatoes peeled and thinly sliced into rounds
- 1 pound beets peeled and thinly sliced into rounds
- 1 1/2 cups shredded Gruyère cheese
Instructions

Preheat the oven to 375°F. Grease a 9×13-inch baking dish with the softened butter.

Warm the milk. In a saucepan over medium heat, warm the milk until steaming, then remove from the heat.

Make the béchamel. In a separate saucepan, melt the butter over medium heat. Whisk in the flour and cook, whisking constantly, for about 1 minute, until lightly golden and fragrant. Gradually whisk in the warm milk, adding a little at a time and whisking well to keep the sauce smooth. Bring to a gentle simmer and cook for 5–7 minutes, whisking often, until thick enough to coat the back of a spoon. Add the garlic, thyme, salt, pepper, and nutmeg. Cook for another minute, then remove from the heat and let cool slightly.

Arrange the vegetables. Pour about half of the béchamel into the prepared baking dish. Working in small batches, stand the russet potato, sweet potato, and beet rounds upright in tight rows, alternating between the three vegetables to create a beautiful striped pattern. Season lightly with salt and pepper as you go.

Bake the gratin. Pour the remaining béchamel evenly over the vegetables, allowing it to settle between the slices. Cover tightly with foil and bake for 1 hour, until the vegetables are tender when pierced with a knife.

Add the cheese. Remove the foil and sprinkle the Gruyère evenly over the top. Return to the oven, uncovered, for another 20–25 minutes, until golden and bubbling. If the top browns too quickly, loosely tent it with foil.

Rest and serve. Let the gratin rest for 15 minutes before serving. Garnish with fresh thyme and enjoy!
A Few Tips for the Perfect Gratin
Use a mandoline. This is one recipe where a mandoline makes all the difference! Thin, even slices help the vegetables cook consistently and create those beautiful layers. Slice your beets slightly thinner than your potatoes, since they take a little longer to cook.
Don’t rush the baking time. The vegetables need time to become perfectly tender and soak up that delicious béchamel.
Let it rest. Giving the gratin 15 minutes to rest after baking helps everything settle before serving.
